Mexican Corn Tomato Salad

Ingredients:

  • 1 can of corn
  • 3 tomatoes
  • 1 cup of feta cheese (cubed)
  • 1 onion
  • 1 cup of Burritos chips
  • 1 tablespoon of olive oil
  • 1 tablespoon of apple vinegar
  • 1 tablespoon of Mexican lime juice

    Directions:

  • Peel tomatoes and onions and slice them
  • Mix tomatoes, onions, corn, olive oil, vinegar and lime juice
  • Add feta cheese and mix it slowly
  • Top it with Burrito chips just before serving

    Mexican Avocado Chicken Salad

    Ingredients:

  • 2 boneless chicken breasts
  • 3 large tomatoes
  • 1 onion
  • 2 Avocados
  • 2 tablespoons of garlic powder
  • 1 tablespoon of Mexican lime juice
  • 1 tablespoon of chili powder
  • salt and pepper to taste

    Directions:

  • cook the chicken and cool it with the cold water, dice it
  • dice the tomatoes, onions and avocados
  • mix the chicken, tomatoes, onions, avocados, garlic powder, lime juice, chili powder and salt and pepper.

    Quick and Basic Mexican Rice Recipe

    Ingredients:

  • 1 cup of rice
  • 2 cups of water
  • 1 can of diced tomatoes
  • 1 can of kidney beans
  • 2 tablespoons of olive oil

    Directions:

    In a sauce pan bring 2 cups of water to a boil. Then add rice and stir for 20 minutes. Stir in diced tomatoes, kidney beans and olive oil and cook for five more minutes.
